This Thursday our December menu will be making its premiere!!! The first night of the new menu is when we do our $20 per person full menu tasting. The tasting is available for tables of 4 or more (it's a LOT of food). It normally fills up very quickly so make your reservation through Facebook, send us an email or call.
Ethiopian Shepherds Pie
1 lb Ground Beef (85-15)
1 Large Onion sliced
2 tablespoons Berbere spice powder (or to taste) Recipe below
2 tablespoons flour
1/2 cup water
2 cups 1/2 inch dice carrots
1 cup green peas
1 teaspoon oil
2 lbs sweet potatoes peeled and diced
1/2 cup heavy cream
1/2 cup butter
Add the sweet potatoes to boiling salted water and cook until tender (about 20 minutes)
While the potatoes are cooking brown and drain the ground beef.
slice the onion and add to the ground beef and cook for about 5 minutes
sprinkle the flour over the beef and onions and stir the flour in well. Cook for an additional 2-3 minutes

Add the Berbere spice mix and stir well. Taste and add more spice mix if desired.
While the beef is cooking, gently sautee the carrots for about 5 minutes in oil, cover and steam for an additional five minutes, add the peas and steam an additional 2 minutes.
When the potatoes are tender, drain and mash with the cream and butter. Add salt and pepper if desired.
Add the beef to a casserole, layer the peas and carrots over the beef, then the mashed sweet potatoes.
Bake at 350 for approximately 45 minutes. Allow to set up for 10 minutes before serving.
Berbere Spice Powder:
1/4 teaspoon ground allspice
3/4 teaspoon ground cardamom
1/8 teaspoon ground cinnamon (optional)
1/8 teaspoon ground cloves
1/2 teaspoon ground coriander (optional)
1/2 teaspoon ground cumin (optional)
1 teaspoon ground fenugreek
1/4 teaspoon ground nutmeg (optional)
1/2 teaspoon ground black pepper
1/4 teaspoon ground turmeric
4 to 6 tablespoons of a combination of ground cayenne pepper,red pepper, dried chile peppers, or red pepper flakes and paprika
1 tablespoons salt
1 teaspoon dried ground ginger
1 teaspoon garlic powder
Mix all ingredients in a blender or grinder. Store in an airtight container.
Mushrooms can be used instead of beef for a vegetarian version. Substitute non dairy cream and butter for a vegan mushroom pie.
Frozen peas and carrots, mixed vegetables or your favorite vegetables can be substituted for the fresh peas and carrots
